Chocolate Coconut Mousse

Ingredients: (serves 4)


1x 270 ml can coconut cream - Ayam is a brand with no additives

2 heaped tablespoons raw cacao powder

1-2 tablespoons maple syrup

1 teaspoon vanilla

2 tablespoons almonds, soaked, brown skins removed

I heaped tablespoon chia seeds

Method:


  1. Put all the ingredients in a blender and whiz on high till the almonds and chia become invisible.
  2. Pour into a mould or individual cups or glasses, and chill overnight or for several hours. By this time you will have a perfect mouse texture.
  3. Enjoy!

Can you believe that something so delicious is so good for you! Low sugar, low carb, packed with protein and good fats. You can even have it for breakfast - guilt free!

We use "biocups" to serve this delicious dessert. This quantity is enough for 4 cups, which hold 1/2 cup each.

Just before Jung died in 1961 he wrote:
